Ingredients
| 1 kilo | chicken breast |
| 2 onions | |
| 3 cloves of garlic | |
| 1 can | Coconut milk (400 ml) |
| 250 g | passata (strained tomatoes) |
| 100 ml | Vegetable broth |
| 1 tsp | freshly chopped ginger |
| 2 tsp | Masala spice |
| 1 tsp | cumin |
| 2 tsp | curry powder |
| 1 tsp | Cayenne pepper |
| 1 | a good pinch of salt |
| Some oil for frying | |
| 1 handful | freshly chopped coriander |
| Optional 2-3 tsp | cornstarch for thickening |
Instructions
Step 1 of 5:
Cut the chicken breast into cubes, finely chop the onion and garlic (the finecut is great for this, by the way).
Step 2 of 5:
Heat oil in the pot and sauté the onions and garlic until translucent, then stir in the coconut milk, broth, and tomatoes. Add all the spices, a good pinch of salt, and the meat.
Step 3 of 5:
Close the lid and set the vitavit to level 1. As soon as the yellow ring appears on the cooking crown, slightly reduce the temperature on the stove. As soon as the green ring appears, the cooking time of about 15 minutes begins.
Step 4 of 5:
Remove the pot from the heat, let it steam out, and remove the lid. Taste again and thicken with cornstarch if necessary.
Step 5 of 5:
Stir in freshly chopped cilantro and serve.
