Ceramic pans

Coated aluminium pans are ideal for gently and crisply frying delicate foods without anything sticking. But there are differences here too, because the non-stick coatings can be made from various materials.

The most popular is the classic coating made from polytetrafluoroethylene, or PTFE for short. Ceramic pans, on the other hand, are made without the use of PFAS (per- and polyfluorinated alkyl substances) or PTFE. Fissler ceramic pans also have a ceramic coating made without PFAS/PTFE.

Fissler ceramic pans are an excellent alternative to conventional pans with a PTFE coating. They have a robust surface and also offer very good non-stick properties.

Using a ceramic-coated pan allows you to cook in a particularly responsible manner. However, Fissler's PTFE-coated pans are also completely safe for your health. In accordance with EU Regulation No. 2019/1021, all Fissler pans are PFOA-free.

How to use ceramic coated pans

Fissler has optimized the thermal properties of the stress-prone ceramic coating: For the Ceratal® coating, a more elastic bond between the metal and the ceramic coating has been achieved. This reduces cracking and preserves the non-stick properties.

The surface of ceramic pans reacts to heat similarly to other ceramic objects, e.g. casserole dishes:

If the temperature is suddenly increased, the metal expands faster than the surface and the ceramic can crack.
Conversely, damage such as cracks can occur due to so-called thermal shock. This happens when a hot pan is suddenly plunged into cold water.

Food residues, such as fats, get stuck in the resulting cracks. These damaged areas act like suction cups on the food being cooked, "holding" it in place. This reduces the non-stick properties.

To maintain the non-stick properties for a long time, you should therefore:

Heat up slowly and evenly
Do not rinse under cold water while hot.

Cleaning & Care

Cleaning and care of ceramic pans

Despite the high quality of Fissler ceramic pans, the lifespan of the ceramic coating depends on how they are cared for:

Prolonged boiling of acidic foods or cleaning in the dishwasher roughens the pan. This can quickly cause it to lose its non-stick properties.
The use of aggressive and abrasive materials also has a negative impact on the non-stick effect.

To benefit from the non-stick properties of your pan for as long as possible, you should:

Clean gently by hand after each use. Use warm water, a little dish soap, and a soft cloth.
Do not use abrasive cleaners or scouring pads. Cleaning in the dishwasher is also not recommended.
