Since pans have edges of varying thickness, the Diameter of round pans at the upper inner edge measured. This ensures, among other things, that pan lids fit universally.

Pan diameter vs. pan surface

The cooking surfaceThe inner surface of the pan, also called the pan surface, does not always correspond to the diameter of the pan: In pans with a thicker rim or a special shape, the inner surface is often smaller than the outer surface. Pan diameter. The surface area available to you for frying with a 28 cm frying pan does not necessarily have to be 28 cm.

Make sure the bottom of the pan faces the Size of your hob. The pan must be the right size to ensure even heat distribution. A pan that is too large for the stovetop will not heat up evenly. If the cooking surface is smaller than the stovetop, valuable energy is wasted.
