Ingredients

2 Zucchini
250g Chicken breast
1 red chili pepper
2 Spring onions
2-3 firm apricots, as desired.
some salt
a little pepper
1 tbsp curry powder
2 tbsp Ponzu (or soy sauce)
2 tsp Mirin (or alternatively sherry or white wine)
2 tbsp vegetable oil
2-3 tbsp toasted sesame seeds

Instructions

Step 1 of 4:

 

Wash and trim the zucchini, then cut into long strips (noodles) using a spiralizer. Pat the chicken dry and dice into approx. 2 cm cubes. Wash and trim the chili pepper and spring onions. Finely dice the chili pepper, cut the spring onions diagonally into rings. Set the green part of the spring onions aside. Quarter and pit the apricots.

Step 2 of 4:

 

Season the zucchini noodles with salt and pepper. Season the chicken with curry powder, salt, pepper, and ponzu.

Step 3 of 4:

 

Heat the oil in the pressure cooker and briefly sear the chicken, then remove it. Briefly sauté the chili cubes and light spring onion rings in the remaining oil, then deglaze with mirin.

Step 4 of 4:

 

Add the zucchini noodles and apricots. Close the Vitavit® pressure cooker, set the cooking crown to the steam symbol (steam cooking level), and steam everything for approx. 5 minutes. Season the zucchini noodles to taste, arrange on plates, sprinkle with spring onion greens and sesame seeds, and serve.
