Ingredients

2 eggs⁠
250 g Greek yogurt⁠
100 ml milk⁠
1 tsp. sugar⁠
1 pinch salt⁠
90 g flour⁠
1 heaped tsp. baking powder⁠
2 apples, cut into wedges⁠
1 tbsp. brown sugar⁠
50 ml apple juice⁠
1 piece butter⁠
pistachios⁠

Instructions

Step 1 of 7:

 

Whisk the eggs, yogurt, milk, sugar, and salt together in a bowl.

Step 2 of 7:

 

Mix the flour and baking powder separately, sift into the egg mixture, and gently fold in. If the batter is too thick, add a little milk.

Step 3 of 7:

 

Cover the batter and let it rest for about 30 minutes.

Step 4 of 7:

 

Heat the butter in the Frying Pan and fry the apples in it.

Step 5 of 7:

 

Reduce the heat, add the sugar, let it caramelize briefly, and deglaze with apple juice. Add the butter and glaze. Remove the apples from the Frying Pan and set aside.

Step 6 of 7:

 

Clean the Frying Pan and heat it with a little butter.⁠

Step 7 of 7:

 

Pour in the pancake batter, spread the caramelized apples evenly on top, and sprinkle with pistachios. Flip once the bottom is golden brown and the surface starts to set.
