Yellow Lentil Curry

Ingredients

1 tsp coconut oil
1 Chili pepper
3 garlic cloves
2 medium-sized onions
1 cm Ginger
200 g Brown lentils
500 ml Water
240 ml Coconut milk
2 tsp Curry Paste
50 g Pea or soy granules
2 Carrots
2 Paprika
1 Handful of spinach
1 tsp Turmeric
1 tbsp soy sauce
1 tsp vegetable broth powder
1 tsp Curry
Side dish: Basmati rice
Toppings: Chili, black sesame oil, pistachios, lime

Instructions

Step 1 of 5:

 

Wash & drain mountain lentils 

Step 2 of 5:

 

Sauté chili, garlic, onions & ginger in coconut oil on the sauté surface of the Vitavit® Premium pressure cooker 

Step 3 of 5:

 

Add mountain lentils & water, close the lid, and cook for 10 min on level 3. Then release steam from the Vitavit® Premium pressure cooker. (Using a conventional pot will take 40-50 min) 

Step 4 of 5:

 

Stir in coconut milk & curry paste. Then add all remaining ingredients & spices & let cook for 3 min on level 1 

Step 5 of 5:

 

Enjoy with rice and toppings!
