Winter Omelette
How about a winter omelette for breakfast this morning? Or would you rather have it for dinner? You absolutely have to try this winter omelette recipe from @tinastausendschoen.

Ingredients
| 1 x | small onion, diced |
| 1 x | carrot, finely grated |
| 1 x | clove of garlic, crushed |
| 150 g | brown mushrooms, chopped |
| 1 tbsp. | clarified butter |
| 1 x | small red chili pepper, finely chopped |
| 60 g | bacon slices, cut into strips |
| 6 x | eggs |
| 1 bunch | mixed herbs (chives, parsley, thyme) |
Instructions
Step 1 of 5:
Sauté all the ingredients except the eggs and the herbs in a large Frying Pan with the butter for approx. 5 minutes.
Step 2 of 5:
Remove and leave to cool slightly. In the meantime, whisk the eggs well and season with salt and pepper. Add the cooled vegetable mixture to the eggs and stir well. Now fold in the chopped herbs.
Step 3 of 5:
Return half of the mixture to the previously used Frying Pan and leave to set over medium heat for approx. 5 minutes. After 5 minutes, fold the omelette in the middle and cook for another approx. 5 minutes until done.
Step 4 of 5:
Remove and keep warm - repeat the same process with the second half of the mixture.
Step 5 of 5:
Serve immediately, sprinkled with chives.
