Winter Omelette
How about a winter omelet for breakfast this morning? Or perhaps for dinner? You absolutely have to try this winter omelet recipe from @tinastausendschoen.

Ingredients
| 1 small onion, diced | |
| 1 x | Carrot, finely grated |
| 1 clove of garlic, pressed | |
| 150g | brown mushrooms, chopped |
| 1 tbsp | clarified butter |
| 1 small red chili pepper, finely chopped | |
| 60 g | Sliced or stripped bacon |
| 6 x | eggs |
| 1 bunch | mixed herbs (chives, parsley, thyme) |
Instructions
Step 1 of 5:
Sauté all ingredients except the eggs and herbs in a large pan with butter for about 5 minutes.
Step 2 of 5:
Remove and let cool slightly. In the meantime, whisk the eggs well and season with salt and pepper. Add the cooled vegetable mixture to the eggs and stir well. Now fold in the chopped herbs.
Step 3 of 5:
Return half of the mixture to the previously used pan and let it set for about 5 minutes over medium heat. After 5 minutes, fold the omelet in half and cook for another 5 minutes.
Step 4 of 5:
Remove and keep warm - do the same with the second half of the mixture.
Step 5 of 5:
Sprinkle with chives and serve immediately.
