Wild garlic soup – that's the taste of spring!

In April, wild garlic sprouts from the forest floor in many places. This wild herb is said to have healing properties, as it is rich in vitamin C, magnesium, and iron. Wild garlic owes its essential oils, which give it an aromatic, garlicky flavor, to its relatives in the onion family. This green harbinger of spring also has much to offer in terms of culinary delights.

Fresh pesto and flavorful spreads made from wild garlic are practically classics. Another favorite is aromatic wild garlic soup – the perfect spring dish for the whole family.

Ingredients

100 g fresh wild garlic
2x spring onions
butter for frying
1x medium potato (floury)
2x cloves of garlic
1 tbsp. flour
800 ml stock
100 ml cream
1 splash lemon juice
1 pinch nutmeg
salt and pepper

Instructions

Step 1 of 6:

 

Before the cooking comes the prep work: the wild garlic needs to be washed and finely chopped together with the spring onion. The potato is also peeled and diced, and the garlic is crushed.

Step 2 of 6:

 

Melt the butter in a tall pot; steam the wild garlic and spring onions over medium heat. It is important not to set the flame too high, otherwise the herbs will start to fry and the butter will reach its smoke point.

Step 3 of 6:

 

Now add the diced potato, which will later give the soup a creamy texture thanks to its starch. Then add the garlic; it highlights the delicate note of the wild garlic.

After all the ingredients have simmered for 3-4 minutes, stir in a tablespoon of flour and pour in the stock.

Step 5 of 6:

 

To cook the potato through, let the soup simmer for another 10-15 minutes. Then add the cream while stirring constantly - and then it's time to blend! A hand blender is recommended for this, but a countertop blender also works well. Just make sure the blender is not sealed airtight, as the soup is hot and pressure can build up.

Step 6 of 6:

 

Finally, season the wild garlic soup with salt and pepper. A pinch of nutmeg and a dash of lemon juice add an extra kick of freshness.

Serving Tipp: Homemade croutons are the perfect finishing touch for the soup. Simply dice any bread of your choice, brown it in a little oil in a Frying Pan, and use it to garnish the wild garlic soup.
