This Turkish lentil soup from the Vitaquick® Premium is a real feel-good dish – aromatic, creamy, and prepared in no time at all. The classic Mercimek Çorbası is given a modern interpretation here and refined with succulent shrimp. Thanks to the pressure cooker, red lentils, potatoes, and carrots are cooked particularly gently and intensely in flavor – and all in just a few minutes of cooking time.

Harissa and tomato paste provide a pleasant spiciness, while thyme and rosemary add Mediterranean notes. Fresh lemon juice gives the soup a fine freshness at the end and harmonizes perfectly with the shrimp cooked in the steam insert.

Ingredients

2 Carrots, diced
2 large potatoes, diced
1 onion, finely diced
1 clove of garlic, finely chopped
250 g red lentils, washed
1 liter Vegetable broth
1 tsp Tomato paste
1 tsp Harissa
400 g Shrimp
Salt
Pepper
Dried thyme
Dried rosemary
2 lemons, sliced

Instructions

Step 1 of 6:

 

Sauté onions and garlic over medium heat, then add carrots and potatoes.

Step 2 of 6:

 

Add tomato paste and harissa. Stir well and fry for another 2 minutes.

Step 3 of 6:

 

Deglaze with vegetable broth and add the washed lentils. Close the lid and cook everything on level 3 for 10 minutes.⁠

Step 4 of 6:

 

Vent the pressure cooker. Then add the shrimp with rosemary, thyme, and lemon slices to the steamer insert and cook for another 10 minutes.⁠

Step 5 of 6:

 

Remove the shrimp and purée the soup.⁠

Step 6 of 6:

 

Season with salt, pepper, and lemon juice, serve with shrimp. ⁠Tip: Chili oil and Turkish yogurt go well with this
