Tofu curry with green asparagus
Today we have a new delicious recipe from @tinastausendschoen for you - tofu curry with green asparagus. This dish was prepared with our Adamant® Comfort Frying Pan.

Ingredients
| 250 g | Basmati Reis |
| 200 g | grünen Spargel |
| 250 g | Tofu, natur |
| 2 EL | Olivenöl |
| 1 | Zwiebel |
| 3 | Knoblauchzehen |
| 1 | daumengroßes Stück Ingwer |
| 1-2 EL | rote Currypaste |
| 350 ml | Gemüsefond |
| 200 ml | Kokosmilch |
| 1 Dose | Kichererbsen |
| 1 Bund | Koriander |
| 1 | Bio Limette Saft und Abrieb |
Instructions
Step 1 of 6:
Cook the rice according to the package instructions. Wash the asparagus, peel if needed, and cut into bite-sized pieces. Dice the tofu.
Step 2 of 6:
Heat 1 tbsp. oil in the Frying Pan, fry the tofu cubes until crispy, then remove them.
Step 3 of 6:
Finely dice the garlic, ginger, and onions, add them to the Frying Pan with the remaining oil, and sauté. Add the curry paste and asparagus, fry briefly, then deglaze with the broth.
Step 4 of 6:
Let simmer for about 8 minutes.
Step 5 of 6:
Add the coconut milk, chickpeas, lime juice, and zest, then let simmer again for a few more minutes.
Step 6 of 6:
Stir in the tofu, season to taste, and serve garnished with coriander.
