Stuffed peppers with minced meat

It's all about the filling
Bell peppers are perfect for meal prepping, as they still taste great the next day. Plus, you can hide a delicious and satisfying filling inside them! Adding different vegetables or a flavorful cheese to the basic ground beef and tomato sauce creates a tasty variety. In no time at all, you can fill several peppers and pop them in the oven. Wrapped in foil, they're easy to take to work, where they only need a quick reheat. Ingredients
| 1 | Onion |
| 200g | Minced meat |
| 1 tbsp | Olive oil |
| 2 tbsp | tomato paste |
| 350ml | broth |
| Pinch | Salt & Pepper |
| A little chili flakes | |
| A little paprika powder | |
| 4 | Tomatoes |
| 2 | Spring onions |
| ½ bunch | parsley |
| 100g | Feta |
| 2 | Paprika |
| 2 tbsp | pine nuts |
Instructions
Step 1 of 5:
Peel the onion, dice it finely, and sauté it with the ground meat in olive oil. After a few minutes, add the tomato paste and 100 ml of broth and simmer briefly. Season with salt, pepper, a little paprika powder, and chili flakes.
Step 2 of 5:
Chop the tomatoes, spring onions, and parsley and let them simmer in the pan for another 2-3 minutes.
Step 3 of 5:
Remove the pan from the heat and gently stir the diced feta into the sauce.
Step 4 of 5:
Wash the bell peppers and cut off the top quarter. Core the pepper and fill it with the sauce. Close it again with the top quarter and place it in an ovenproof dish. Add the remaining broth to the dish and bake for 30 minutes at 200 degrees in the oven.
Step 5 of 5:
Add the pine nuts to a pan without oil and toast until golden brown. Remove the bell peppers from the oven, arrange them on a plate, and sprinkle with the pine nuts.
