Ingredients

1 large onion, diced⁠
1 red pepper, diced⁠
600 g chopped canned tomatoes
2 cloves of garlic, finely chopped
4 eggs
1 tsp Harissa
2 tsp ground cumin
1 pinch sugar
1 pinch of salt
Fresh coriander
Butter for frying
Feta cheese
Naan Bread

Instructions

Step 1 of 5:

 

Melt butter in a pan and fry the onion and diced bell pepper in it.⁠

Step 2 of 5:

 

Add sugar, garlic, cumin, and harissa and continue frying briefly.⁠

Step 3 of 5:

 

Add the tomatoes to the pan, season with salt, and simmer for about 10 minutes.⁠⁠

Step 4 of 5:

 

Stir in some chopped cilantro, make indentations in the sauce with a ladle, and carefully crack in the eggs. Cover and simmer for another 10 minutes until the eggs are set.

Serve with fresh cilantro, crumbled feta cheese, and naan bread.
