Ingredients
| 1 | large onion, diced |
| 1 | red pepper, diced |
| 600 g | chopped canned tomatoes |
| 2 cloves of garlic, finely chopped | |
| 4 eggs | |
| 1 tsp | Harissa |
| 2 tsp | ground cumin |
| 1 pinch | sugar |
| 1 pinch of salt | |
| Fresh coriander | |
| Butter for frying | |
| Feta cheese | |
| Naan Bread |
Instructions
Step 1 of 5:
Melt butter in a pan and fry the onion and diced bell pepper in it.
Step 2 of 5:
Add sugar, garlic, cumin, and harissa and continue frying briefly.
Step 3 of 5:
Add the tomatoes to the pan, season with salt, and simmer for about 10 minutes.
Step 4 of 5:
Stir in some chopped cilantro, make indentations in the sauce with a ladle, and carefully crack in the eggs. Cover and simmer for another 10 minutes until the eggs are set.
Step 5 of 5:
Serve with fresh cilantro, crumbled feta cheese, and naan bread.
