Potato dumplings with paprika sauerkraut

Ingredients
| 700g | Schupfnudeln |
| 100g | lean ham cubes |
| 500g | Sauerkraut |
| 2 | red bell peppers |
| 2 tbsp | tomato paste |
| 150 ml | Water |
| 1 tsp | sweet paprika powder |
| Salt, pepper | |
| Parsley | |
| Oil or butter for frying |
Instructions
Step 1 of 6:
Peel the onion, dice it, and wash and dice the bell pepper as well.
Step 2 of 6:
Heat oil in a pot and briefly sauté the diced onion and bell pepper with the tomato paste.
Step 3 of 6:
Add the sauerkraut and deglaze with water.
Step 4 of 6:
Season with salt, pepper, and paprika powder, and simmer for approx. 8 minutes over medium heat.
Step 5 of 6:
Meanwhile, heat oil in a pan and fry the Schupfnudeln and diced ham until golden brown.
Step 6 of 6:
Serve the Schupfnudeln with the sauerkraut and some parsley.
