Radicchio risotto with mountain cheese and walnuts

Ingredients
| 4 tbsp | butter |
| 2 tbsp | Olive oil |
| 1 | large, red onion, sliced |
| 2 | Radicchio, in narrow strips |
| 250 g | Risotto Rice |
| 100 ml | dry red wine |
| 400 ml | Vegetable broth |
| 4 tbsp | Walnuts, roughly chopped, toasted if desired |
| 4 tbsp | Grated mountain cheese |
| 1-2 | Thyme sprigs, leaves picked |
| Salt & Pepper |
Instructions
Step 1 of 4:
Heat 1 tbsp butter with the olive oil in the Vitavit® Premium and sauté the radicchio (set aside approx. 2-3 tbsp for garnish) and onion strips for approx. 5-6 minutes. Add the rice and toast briefly.
Step 2 of 4:
Add red wine and vegetable broth. Close the Fissler pressure cooker according to instructions. Set the cooking indicator with traffic light function to level 3 (quick cooking level) and heat. As soon as the green ring appears, the cooking time of 5 minutes begins.
Step 3 of 4:
Allow the pressure cooker to steam off and open according to instructions. Stir in the butter with the grated mountain cheese and thyme into the risotto. Season with salt and pepper.
Step 4 of 4:
Serve the risotto in deep plates, sprinkled with walnuts and, if desired, with additional cheese and radicchio.
