Ingredients

2 eggs
1 Pinch of salt
20g Sugar
100g Pumpkin puree
90g Flour
1/2 tsp Cinnamon or Pumpkin Spice
115ml Milk
1 tsp oil
Icing sugar to taste

Instructions

Step 1 of 5:

 

Separate eggs and beat egg whites with salt until stiff, then cream egg yolks with sugar.

Step 2 of 5:

 

Add pumpkin puree and stir in. Mix flour and cinnamon and sift over the top.

Step 3 of 5:

 

Pour in milk, mix everything well, and gently fold in egg whites in 2 portions.

Step 4 of 5:

 

Let rest for 10 minutes. Then heat oil in the pan and spread the batter evenly. Cover and bake on medium heat for 8 - 10 minutes.

Step 5 of 5:

 

Cut into four pieces with a spatula and flip. Cover again and bake for another 4 - 6 minutes. Then cut into pieces with two spatulas. Dust with powdered sugar and serve.
