Ingredients
| 2 eggs | |
| 1 | Pinch of salt |
| 20g | Sugar |
| 100g | Pumpkin puree |
| 90g | Flour |
| 1/2 tsp | Cinnamon or Pumpkin Spice |
| 115ml | Milk |
| 1 tsp | oil |
| Icing sugar to taste |
Instructions
Step 1 of 5:
Separate the eggs and beat the egg whites with salt until stiff, then whisk the egg yolks with sugar until frothy.
Step 2 of 5:
Add the pumpkin puree and stir in. Mix the flour and cinnamon and sift over the top.
Step 3 of 5:
Pour in the milk, mix everything well, and gently fold in the egg whites in 2 batches.
Step 4 of 5:
Leave to rest for 10 minutes. Then heat the oil in the Frying Pan and spread the batter evenly. Cover and cook over medium heat for 8 - 10 minutes.
Step 5 of 5:
Use a spatula to divide into four pieces and turn over. Cover again and cook for another 4 - 6 minutes. Then use two spatulas to tear into pieces. Dust with icing sugar and serve.
