Pulled Chicken Sandwich

Ingredients
| 3 | Chicken breast |
| 250 ml | Vegetable broth |
| 120 g | Tomato sauce or BBQ sauce |
| 1 | Onion |
| 1 tbsp | garlic powder |
| 3 tbsp | virgin olive oil |
| Salt, pepper | |
| For the sandwich: | |
| 2 | Ciabattas or 1 baguette |
| 2 ripe avocados | |
| 150 g | Red cabbage |
| 2 | carrots |
| 1 tbsp | lemon juice |
Instructions
Step 1 of 6:
Rub chicken breast with oil, garlic powder, salt, and pepper. Peel onion.
Step 2 of 6:
Place meat and onion in the pressure cooker. Add vegetable broth and tomato sauce, close the pressure cooker, and set to the third cooking level. When the green ring appears, cook meat for 20 minutes. Then remove the pressure cooker from the heat, let it steam release, and open.
Step 3 of 6:
Meanwhile, cut red cabbage and carrot into thin strips. Halve avocado, remove the pit, scoop out the flesh with a spoon, and mash with a fork. Refine avocado cream with lemon juice and season with salt and pepper.
Step 4 of 6:
Halve ciabatta lengthwise, spread with butter, and briefly toast in a pan.
Step 5 of 6:
Remove meat, shred in a bowl with two forks, add some sauce from the pressure cooker until the desired consistency is reached, and mix.
Step 6 of 6:
Top bread with avocado, meat, red cabbage, and carrot.
