Potato Pumpkin Curry
Today we have a new pressure cooker recipe for you: Potato and Pumpkin Curry from the Vitavit® Premium from @sandraskochblog.

Ingredients
| 500 g | Potatoes |
| 250 - 300 g | Hokkaido pumpkin |
| 1 | Onion |
| 50 g | red curry paste |
| 400 ml | Coconut milk (1 can) |
| approx. 100 ml | water |
| A good pinch of salt and pepper. | |
| 1 tsp | Coconut oil for frying |
Instructions
Step 1 of 5:
Peel the potatoes and cut them into large cubes, finely chop the onion, and core, trim, and cube the pumpkin.
Step 2 of 5:
Heat coconut oil and sauté the onion, potatoes, and pumpkin in the Vitavit® Premium for 2-3 minutes.
Step 3 of 5:
Add curry paste, coconut milk, salt & pepper, and about 100 ml of water.
Step 4 of 5:
Close the pot and set to cooking level 2. Once the yellow ring appears, reduce the heat. When the green ring appears, let the curry cook for approx. 10 minutes.
Step 5 of 5:
Remove the pot from the heat and then simply vent using the cooking crown or the control button and serve.
