Savoy cabbage stir-fry

Ingredients
| 1 | onion |
| oil for frying | |
| 400 g | ground beef |
| 1 | small pointed cabbage (approx. 600g) |
| 3 | small carrots |
| 2 cm | ginger |
| 1 | chili pepper (mild or hot) |
| 1 tbsp. | curry powder |
| 350 ml | coconut milk |
| 200 ml | vegetable stock |
| salt, pepper | |
| parsley (for garnish) |
Instructions
Step 1 of 7:
Dice the onion, slice the carrots into rounds. Peel the ginger and finely chop it with the chilli.
Step 2 of 7:
Wash the pointed cabbage and cut it into quarters. Remove the outer leaves and the core, then slice into fine strips.
Step 3 of 7:
Heat oil in a large Frying Pan. Spread the onion, ginger, and minced meat in the Frying Pan and fry until crispy. Remove from the Frying Pan.
Step 4 of 7:
Heat oil again in the same Frying Pan and fry the pointed cabbage and carrots for approx. 5 min over medium heat. Stir occasionally.
Step 5 of 7:
Add the coconut milk, vegetable stock, and curry powder. Bring briefly to the boil, then simmer gently with the Lid on for approx. 5-8 minutes until the vegetables are tender with a bite.
Step 6 of 7:
Add the meat and fold it in.
Step 7 of 7:
Season with chilli, salt, and pepper and serve hot with freshly chopped parsley and optionally rice or potatoes.
