Ingredients

For the quick brioche dough:
200 g wheat flour
3 g dry yeast
1 tsp sugar
1 pinch salt
45 ml lukewarm milk
1 egg (size M)
40 g soft butter (cut into cubes)
For the filling & topping:
300 g ground beef
60 g chorizo (thinly sliced)
2 tomatoes (sliced)
6 tbsp thick tomato sauce (seasoned with oregano & salt)
90 g Fior di latte mozzarella (grated)
40 g cheddar (grated or thinly sliced)
1 egg yolk (for brushing)
30 g sesame seed mix

Instructions

Step 1 of 8:

 

Mix the flour, dry yeast, sugar, and a pinch of salt together dry in a mixing bowl.

Step 2 of 8:

 

Add the lukewarm milk and the egg. Mix everything with the dough hooks of the stand mixer or by hand. Gradually knead in the soft butter cubes until a smooth, glossy dough forms (knead vigorously for about 5–7 minutes).

Step 3 of 8:

 

Let the dough rise, covered, in a warm place for about 45–60 minutes, until it has clearly doubled in size. Then divide it into evenly sized balls.

Step 4 of 8:

 

Crisp the chorizo slices in the Ceratal® Evo Comfort pan, remove and drain on paper towels.

Step 5 of 8:

 

Shape the minced meat into four balls. Add the balls to the pan and flatten them "smash" style. Sear on both sides for about 1 minute each over high heat.

Step 6 of 8:

 

Roll out the brioche dough pieces into perfect circles. Spread the tomato sauce in the centre. Then layer on the cheese, patties, tomato slices, and crispy chorizo.

Step 7 of 8:

 

Fold the dough over the filling from the sides so it covers it completely on top. Press the edges together firmly so nothing leaks out while baking.

Step 8 of 8:

 

Place the burgers in the Adamant® roaster with the seam side down. Brush with beaten egg yolk and top with a sesame seed mix. Bake at 200 °C top/bottom heat for about 12–15 minutes until golden brown.
