One-pan lasagna with ricotta

Ingredients
| 1 tbsp | Olive oil |
| 400 g | Minced beef |
| 200 g | Diced soup vegetables (carrots, celery, leek) |
| 1 | small onion |
| 1 | Can of tomatoes (440g) |
| 250 ml | Beef stock |
| 4-6 | Lasagna sheets (fresh ones are best, but dried ones also work) |
| Salt | |
| Pepper | |
| 1 tsp | Oregano + Herbs of Provence |
| 3 tbsp | Ricotta |
| 50 g | Grated Parmesan |
| Basil |
Instructions
Step 1 of 5:
Peel and finely dice the onion. Heat the oil in a pan and brown the ground meat, breaking it up, over high heat, then remove.
Step 2 of 5:
Sauté the onion and the finely diced soup vegetables in cooking fat over medium heat, then add the ground meat back in.
Step 3 of 5:
Add the tomatoes, spices, and beef broth, stir everything briefly, and let simmer over low heat for approx. 20 minutes.
Step 4 of 5:
Halve the lasagna sheets lengthwise and place them in the tomato sauce. Let simmer for another approx. 5 minutes.
Step 5 of 5:
Mix ricotta with 1 tsp Parmesan and add it to the sauce in dollops. Cover with a lid and let steep briefly. Sprinkle the remaining Parmesan on top and serve immediately.
