Miso-Glazed Delicata Squash with Hazelnut Dukkah and Fried Sage Leaves from the Ceratal® Evo Pan

Ingredients

FOR THE DELICATA SQUASH:
1-2 Delicata squash (approx. 600-800 g)
3 tbsp miso, white or yellow
2 tbsp honey or maple syrup
2 tbsp soy sauce
2 tbsp sesame oil
1 tbsp rice vinegar
salt
pepper
sesame seeds
FOR THE HAZELNUT DUKKAH:
100 g hazelnuts
2 tbsp sesame seeds
1 tsp cumin, ground
1 tsp coriander seeds, ground
1 tsp pepper, ground
1 tsp sea salt
FOR THE SAGE LEAVES:
20-25 sage leaves, fresh
oil, for frying (e.g. peanut oil or sunflower oil)

Instructions

Step 1 of 9:

 

Cut the Delicata squash in half lengthwise and remove the seeds with a spoon. Slice the halves into thin rounds.

Step 2 of 9:

 

In a bowl, mix the miso, honey, soy sauce, sesame oil, rice vinegar, salt, and pepper well.

Step 3 of 9:

 

Add the pumpkin slices to the miso marinade and mix well. Let marinate for at least 15 minutes.

Step 4 of 9:

 

Heat the pan over medium heat. Add the marinated pumpkin slices and fry for approx. 10-15 minutes until they are tender and lightly caramelized. Turn occasionally.

Step 5 of 9:

 

Meanwhile, toast the hazelnuts and sesame seeds until golden brown in another pan without fat. Let cool.

Step 6 of 9:

 

Roughly chop the roasted hazelnuts and mix them in a bowl with sesame, cumin, coriander seeds, pepper, and salt.

Step 7 of 9:

 

Heat enough oil in a saucepan to deep-fry the sage leaves (approx. 180 °C).

Step 8 of 9:

 

Carefully add the fresh sage leaves to the hot oil. Fry until they are crisp and translucent (approx. 1-2 minutes). Drain on paper towels.

Step 9 of 9:

 

Arrange the miso-glazed Delicata squash on a plate. Generously sprinkle with hazelnut dukkah. Garnish with fried sage leaves and, if desired, sprinkle with sesame seeds.
