Minestrone Pasta Salad

This mix tastes great warm as a pasta dish or cold as a salad, and it's also perfect for preparing in advance. We cooked this dish using pots from our Original-Profi Collection® and our Adamant® Comfort Pan. .

Ingredients
| 300 g | Pasta (shell pasta or similar) |
| 2 tbsp | Olive oil |
| 2 | stalks of celery, cut into rings |
| 1 | Carrot, halved lengthwise, in rings |
| 2-3 stalks of black kale, alternatively curly kale or savoy cabbage | |
| 1 onion, finely diced | |
| 1 | Clove of garlic, diced |
| 1 | Can of Cannellini Beans (400g), drained |
| 500 g | Cherry tomatoes, halved |
| 2 tsp | lemon juice |
| Salt and pepper | |
| 4 tbsp | grated Parmesan |
| Basil |
Instructions
Step 1 of 4:
Cook pasta according to package directions. Reserve some pasta water.
Step 2 of 4:
Heat oil in a pan and sauté onions, garlic, carrots, and celery until tender-crisp. Finally, add the kale and beans and sauté for another approx. 2-3 minutes.
Step 3 of 4:
Season with salt and pepper. Mix pasta with vegetables and tomatoes. Mix remaining oil in the pan with the pasta water and lemon juice and pour over the pasta.
Step 4 of 4:
To serve, fill into a large bowl or 4 plates and sprinkle with Parmesan cheese and basil leaves.
