Minestrone Pasta Salad
Fancy a fresh Mediterranean pasta salad? Then the Minestrone Pasta Salad by @tinastausendschoen is just the thing for you. But what do we love most? The mix tastes great warm as a pasta dish or cold as a salad, and it’s also easy to prepare in advance. The dish was made with the pots from our Original-Profi Collection® and our Adamant® Comfort Frying Pan.

Ingredients
| 300 g | Nudeln (Muschel Pasta oder ähnliches) |
| 2 EL | Olivenöl |
| 2 | Stangen Staudensellerie, in Ringe geschnitten |
| 1 | Möhre, längs halbiert, in Ringen |
| 2-3 | Stängel Schwarzkohl alternativ Grünkohl oder Wirsing |
| 1 | Zwiebel, fein gewürfelt |
| 1 | Knoblauchzehe, gewürfelt |
| 1 | Dose Cannellini Bohnen (400g), abgetropft |
| 500 g | Cherrytomaten, halbiert |
| 2 TL | Zitronensaft |
| Salz und Pfeffer | |
| 4 EL | Parmesan gerieben |
| Basilikum |
Instructions
Step 1 of 4:
Cook the pasta according to the package instructions. Reserve some pasta water.
Step 2 of 4:
Heat the oil in a Frying Pan and saute the onion, garlic, carrots, and celery until tender with a bite. Finally, add the black kale and beans and cook for another approx. 2-3 minutes.
Step 3 of 4:
Season with salt and pepper. Mix the pasta with the vegetables and tomatoes. Mix the remaining oil in the Frying Pan with the pasta water and lemon juice and pour over the pasta.
Step 4 of 4:
To Serve, place in a large bowl or on 4 plates and sprinkle with Parmesan and basil leaves.
