Mediterranean potato salad

| 550g | medium waxy potatoes |
| 2 tsp. | capers |
| 1 - 2 tbsp. | pitted black olives |
| 1 | small red onion |
| 90 g | feta |
| 1 tbsp. | toasted pine nuts |
| | For the dressing |
| 1 tbsp. | chopped parsley |
| 0,5 tbsp. | chopped dill |
| 0,5 tbsp. | chopped mint |
| 0,5 tbsp. | chopped basil |
| 5 tbsp. | olive oil |
| 2 tbsp. | lemon juice |
| 1 | garlic clove |
| sea salt | |
| pepper |
Instructions
Step 1 of 4:
Clean the potatoes. Halve or quarter large potatoes. Fill water into the Vitavit® up to the minimum mark and place the steamer insert with the potatoes into the Vitavit®. Close the pot and set Cooking Levels 3. Wait until the green ring appears on the cooking crown. From this point, cook the potatoes for 10 min. Then release the steam.
Step 2 of 4:
Leave the potatoes to cool slightly, peel them, cut them into thick slices, and place them in a salad bowl.
Step 3 of 4:
Peel the onion and cut it into fine rings. Add the onion, capers, and olives to the potatoes. Crumble the feta into the salad. Toast the pine nuts until golden and add them to the potatoes as well.
Step 4 of 4:
For the dressing, finely chop all the herbs. Peel the garlic and crush it. Thoroughly mix the garlic, herbs, olive oil, lemon juice, salt, and pepper, and add to the potato salad. Gently mix the potato salad until the dressing is evenly distributed. Chill the potato salad for at least 1h, then enjoy!
