Mediterranean potato salad

Ingredients
| For the salad | |
| 550g | medium-sized, predominantly waxy potatoes |
| 2 tsp | capers |
| 1 - 2 tbsp | pitted black olives |
| 1 | small red onion |
| 90 g | Feta |
| 1 tbsp | roasted pine nuts |
| For the dressing | |
| 1 tbsp | chopped parsley |
| 0.5 tbsp | chopped dill |
| 0.5 tbsp | chopped mint |
| 0.5 tbsp | chopped basil |
| 5 tbsp | Olive oil |
| 2 tbsp | lemon juice |
| 1 | Clover of garlic |
| Sea salt | |
| Pepper |
Instructions
Step 1 of 4:
Clean the potatoes. Halve or quarter large potatoes. Fill the Vitavit® with water up to the min. mark and place the steam insert with potatoes in the Vitavit®. Close the pot and set to cooking level 3. Wait until the green ring on the cooking crown appears. From now on, cook potatoes for 10 min. Then steam off.
Step 2 of 4:
Let the potatoes cool slightly, peel them, cut them into thick slices, and place them in a salad bowl.
Step 3 of 4:
Peel the onion, cut into fine rings. Add the onion, capers, and olives to the potatoes. Crumble feta into the salad. Roast pine nuts until golden and add them to the potatoes as well.
Step 4 of 4:
For the dressing, finely chop all herbs. Peel and press the garlic. Thoroughly mix garlic, herbs, olive oil, lemon juice, salt, and pepper and add to the potato salad. Gently mix the potato salad until the dressing is evenly distributed. Chill the potato salad for at least 1 hour, then enjoy!
