Mediterranean One Pot Pasta

Ingredients
| 1x | large zucchini |
| 1x | Aubergine |
| 1 clove of garlic | |
| 1x | Onion |
| 800 g | Diced Tomatoes |
| 200 ml | broth |
| 1 tbsp | Tomato paste |
| 1 tsp | Olive oil |
| Salt, pepper, Italian herbs | |
| 260 g | Raw pasta |
Instructions
Step 1 of 5:
Peel and dice the onion and peel and chop the garlic. Wash and dice the zucchini & eggplant.
Step 2 of 5:
Heat oil in the pan and briefly sauté the diced onion and garlic.
Step 3 of 5:
Add the eggplant and zucchini. Then add the tomato paste and Italian herbs to the pan.
Step 4 of 5:
Deglaze with broth and tomatoes and season with salt and pepper.
Step 5 of 5:
Now add the pasta and let the whole thing simmer with a lid for approx. 15 minutes. Serve with Parmesan.
