Italian Minestrone

Ingredients
| 150g | dry pasta |
| 2 | Carrots |
| 1 | Zucchini |
| 1 | large onion |
| 400g | Tomatoes |
| 300g | white beans |
| 1 tbsp | Olive oil |
| 1 tbsp | tomato paste |
| 1 liter of vegetable broth | |
| Salt, pepper, Italian herbs | |
| Garlic | |
| Approx. 30g | vegan Parmesan alternative |
Instructions
Step 1 of 4:
Peel and dice the onion and garlic. Then peel the carrots and cut them into slices. Wash the zucchini, halve it, and also cut it into slices. Wash and dice the tomatoes.
Step 2 of 4:
Heat the oil in the pot and sauté the zucchini. Add the onions and garlic to the zucchini and sauté. Then add the tomato paste and sauté briefly before adding the tomatoes. Then deglaze everything with broth.
Step 3 of 4:
Now add the carrots and let everything simmer for about 10 minutes. In parallel, cook the pasta in salted water. Drain the pasta and season the soup with Italian herbs, salt, and pepper. Drain the beans and add them.
Step 4 of 4:
Now add the pasta to the soup, bring to a boil briefly, and serve with Parmesan.
