Step 1 of 9:
Bring water for the noodles to a boil. Carrot peel, halve lengthwise and crosswise, and cut into fine batons. Bell pepper halve, remove the stem and seeds, and cut into fine strips. Lime wash in hot water, grate the zest, and halve. Juice one half and cut the remaining half into two wedges.
Step 2 of 9:
Trim the root and top green from the spring onion, cut the white part of the spring onion into fine rings, and slice the green part of the spring onion diagonally into thin strips. Noodles add to the boiling water with salt, remove the pot from the heat, and leave to soak covered for 4 minutes.
Step 3 of 9:

Step 4 of 9:
At the end of the cooking time, drain the noodles, rinse thoroughly with cold water, and toss with a little oil. Chilli crumble finely. Garlic peel and finely chop.
Step 5 of 9:
Heat oil in a large Frying Pan and fry noodles, carrot, bell pepper and half of the chilli over high heat for 5 minutes until crispy. Season with salt.
