Indian Pea Spice Frittata

Ingredients
| 1 clove of garlic | |
| 2 onions + 1 for topping (optional) | |
| 400 g | Potatoes |
| 2 tbsp | Olive oil |
| 1 bunch | Coriander |
| 1 bunch | flat-leaf parsley |
| 1 tsp | Turmeric |
| 1 tsp | Curry |
| 1/2 tsp | cinnamon |
| 1 tsp | Paprika powder |
| 8 | Eggs |
| 100 g | Frozen peas |
| 200 g | Natural yogurt |
| 2-3 stems | Mint |
| 2 tsp | lemon juice |
| Salt /Pepper | |
| 2 tbsp | Olive oil |
Instructions
Step 1 of 6:
Finely dice the garlic and onions. Peel the potatoes and also cut them into approx. 1-2 cm cubes.
Step 2 of 6:
Heat oil in an ovenproof pan and sauté the onions, garlic, and potatoes for approx. 2 minutes. Add spices and continue to sauté for approx. 5 minutes, stirring.
Step 3 of 6:
Preheat oven to 200° C conventional heat.
Step 4 of 6:
Finely chop 1/2 bunch of cilantro and parsley. Whisk the eggs in a bowl and season with salt and pepper. Pour over the potatoes. Add peas and herbs and let everything set for approx. 2 minutes.
Step 5 of 6:
Place in the preheated oven and let set for another approx. 10-15 minutes.
Step 6 of 6:
Meanwhile, finely chop mint and mix with the remaining ingredients to make a dip. Serve with the frittata.
