Indian Pea Spice Frittata

Ingredients
| 1 | Knoblauchzehe |
| 2 | Zwiebeln + ggfs. 1 für das Topping |
| 400 g | Kartoffeln |
| 2 EL | Olivenöl |
| 1 Bund | Koriander |
| 1 Bund | glatte Petersilie |
| 1 TL | Kurkuma |
| 1 TL | Curry |
| 1/2 TL | Zimt |
| 1 TL | Paprikapulver |
| 8 | Eier |
| 100 g | TK Erbsen |
| 200 g | Naturjoghurt |
| 2-3 Stängel | Minze |
| 2 TL | Zitronensaft |
| Salz /Pfeffer | |
| 2 EL | Olivenöl |
Instructions
Step 1 of 6:
Dice the garlic and onions finely. Peel the potatoes and cut them into cubes about 1-2 cm in size as well.
Step 2 of 6:
Heat the oil in an ovenproof Frying Pan and saute the onions, garlic, and potatoes for about 2 minutes. Add the spices and continue to saute for another 5 minutes, stirring.
Step 3 of 6:
Preheat the oven to 200° C top/bottom heat.
Step 4 of 6:
Finely chop 1/2 bunch of coriander and parsley. Whisk the eggs in a bowl and season with salt and pepper. Pour over the potatoes. Add the peas and herbs and let everything set for about 2 minutes.
Step 5 of 6:
Place in the preheated oven and let set again for about 10-15 minutes.
Step 6 of 6:
In the meantime, finely chop the mint and mix with the remaining ingredients to make a dip. Serve with the frittata.
