Honey stir-fry with udon noodles, spinach and crispy sesame tofu

Stir-frying is a traditional cooking method in Chinese cuisine. Vegetables are stir-fried in a wok or pan until very hot. This allows for a wide variety of stir-fry creations.

We opted for a vegetarian version here, featuring crispy sesame tofu as the star ingredient. This tofu, along with our Asian favorites coriander and ginger, really shines. Combined with honey and fresh baby spinach, it creates a vegetarian culinary delight reminiscent of Asian cuisine.

Ingredients

200 g Tofu
225 g Udon noodles
50 g Soy sprouts
50 g Baby spinach
25 g Ginger
1 bunch Coriander
1 clove of garlic
20 ml Sesame oil
20 g Honey
2 tbsp Soy sauce
5 g Sesame
4 pieces Long pepper
4 tbsp vegetable oil
1 tbsp White wine vinegar
Salt
Sugar

Instructions

Step 1 of 9:

 

Bring water to a boil in a pot for the udon noodles. Cut tofu into approx. 2 cm cubes. Finely chop lemongrass. Peel and finely chop ginger. Reserve coriander tips for garnish, roughly chop remaining coriander with stems. Peel and finely dice garlic.

Step 2 of 9:

 

In a bowl, combine lemongrass with soy sauce, ginger, honey, garlic, sesame oil, 5 tbsp water, and white wine vinegar. Season with 2 tsp sugar and salt.

Step 3 of 9:

 

Add udon noodles and salt to the boiling water and cook for 4 minutes until al dente.

Step 4 of 9:

 

Drain the cooked udon noodles, rinse with cold water, and toss with 1 tbsp oil in the pot.

Step 5 of 9:

 

Heat 2 tbsp oil in a pan and fry tofu cubes over high heat for approx. 8 minutes until golden brown on all sides and season with salt. Then remove the pan from the heat.

Step 6 of 9:

 

Add 3 tbsp honey-lemongrass marinade and toss the tofu cubes in it for 30 seconds. Then remove from the pan, place in a bowl with sesame seeds, and mix well.

Step 7 of 9:

 

Heat 1 tbsp oil again in the previously used pan and fry the udon noodles for 1 minute over high heat. Then add the remaining marinade and continue to fry for 30 seconds.

Step 8 of 9:

 

Remove the pan from the heat, add baby spinach, chopped coriander, and bean sprouts, and mix well.

Step 9 of 9:

 

Arrange the Honey Stir-Fry in a bowl and garnish with crispy sesame tofu and coriander tips.
