Halloween Chili con Carne

Ingredients

750 g Minced beef
400 ml good beef stock
3 Onions, cut into large wedges
2 Clovers of garlic, peeled, whole
3 tbsp tomato paste
2 x 400 g diced canned tomatoes
1 tsp smoked paprika powder
1 pinch of chili flakes
1 tbsp sweet paprika powder
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp cinnamon
400 g Canned kidney or chili beans
200 g Butternut squash, peeled, cubed or cut into Halloween shapes
1 Lime
1/2 bunch of coriander
Olive oil for frying
Salt & Pepper

Instructions

Step 1 of 6:

 

Brown the minced meat in a little olive oil in the Fissler Vitavit® Premium pressure cooker. It should be nicely browned and have a crumbly texture. (TIP – we usually brown the minced meat in several batches so it does not release water)

Step 2 of 6:

 

Add all the spices, tomato purée, and onion wedges and fry briefly for approx. 2–3 minutes.

Step 3 of 6:

 

Deglaze with the stock, a little lime juice, and the tomatoes, then add the garlic cloves.

Step 4 of 6:

 

Close the pressure cooker and select cooking level 3. Heat on the highest hob setting until the temperature ring reaches “yellow”. Then reduce the heat and cook for 15 minutes when the temperature ring is “green”.

Step 5 of 6:

 

Remove the pressure cooker from the hob and release the steam. Open the pot, add the beans and pumpkin pieces, and stir well. Close the pot again, set cooking level 1, and increase the heat again. Then cook for 2 minutes.

Step 6 of 6:

 

Serve with sour cream, coriander, and a little baguette or rice.
