Green quiche with broccoli and zucchini
What do broccoli, zucchini, spinach, and parsley have in common? That's right – they all boast a vibrant green color, making them perfect for your Maundy Thursday meal. Cooking with green ingredients in all forms is a long-standing tradition in many places on Maundy Thursday. This custom dates back to the 14th century and suggests that green vegetables and herbs eaten on this day will provide health and strength for the entire year.

Ingredients
| 50 g | Wholemeal flour |
| 10 g | Butter |
| 20 g | Yogurt |
| 1 tbsp | water |
| Sugar | |
| Salt | |
| 100 g | Broccoli |
| 100 g | Zucchini |
| 50 g | Peas |
| 1/2 | Spring onion |
| a little olive oil | |
| 20 g | Walnuts |
| 100 ml | Milk |
| 1 | Egg |
| 30 g | grated Gouda |
Instructions
Step 1 of 10:
For the quiche dough, knead the whole wheat flour, water, and yogurt together and season with salt and pepper.
Step 2 of 10:
Wash and chop the spring onions and zucchini.
Step 3 of 10:
Blanch the broccoli in hot water with salt.
Step 4 of 10:
Cook the peas in hot water.
Step 5 of 10:
Now roll out the dough and line a quiche dish with it. Make sure to create a raised edge.
Step 6 of 10:
Beat the eggs and mix with the milk. Season the mixture with salt and pepper.
Step 7 of 10:
Heat a pan. Sauté the blanched broccoli with the chopped spring onions and zucchini. Then, place everything into the quiche dish on top of the dough. Add the cooked peas as well.
Step 8 of 10:
Roast the walnuts in a pan and then distribute them in the dish as well.
Step 9 of 10:
Now pour the milk and egg mixture over the roasted vegetables and walnuts in the dish.
Step 10 of 10:
Sprinkle the whole dish with grated Gouda cheese and bake at 180°C in the oven. After 30-40 minutes, the green quiche is ready to serve.
