Frittata

Ingredients

8 Eggs
1 Onion
2 cloves of garlic
1 sprig rosemary
3-4 sprigs Thyme
1 Pepper
1 handful Zickerspoden
250 g green asparagus
1 Zucchini
Salt, pepper

Instructions

Step 1 of 4:


Finely dice the onion, finely chop the herbs and garlic. Dice the zucchini, cut the asparagus and bell peppers into smaller pieces.

Step 2 of 4:


Sauté the onion, garlic, and herbs in 2 tbsp olive oil. Add the remaining vegetables and fry for 5 minutes.

Step 3 of 4:


Whisk the eggs in a bowl, salt them, and pour over the vegetables. Let the frittata set, covered, over low heat for 15 minutes.

Step 4 of 4:


Serve the frittata with salad and tomatoes. Delicious - also with salmon! Best served with a dressing made from orange and lemon juice, olive oil, mustard, honey, and salt.
