Steamed dumplings with vanilla sauce

Today we have a sweet, Christmassy recipe for you from @klara_and_ida: Steamed dumplings with vanilla sauce from the Vitavit® Premium pressure cooker.

The Vitavit® Premium pressure cooker has many advantages – such as the pressureless steam cooking setting. Using an insert, food can also be gently steamed in the pressure cooker. The steam escapes through the cooking crown, and the cooking time is the same as with conventional cooking.

Ingredients

For the dough⁠ of the steamed dumplings⁠
350g flour
30g Sugar
1 Pinch of salt
1 small egg
30g soft butter
120 ml lukewarm milk
0.5 cubes of fresh yeast (20g)
For the filling⁠ of the steamed dumplings⁠
3 apples
30g Butter
1/2 tsp ⁠ vanilla powder⁠⁠
30g Sugar
30ml ⁠ Water⁠⁠
For the vanilla sauce to go with the steamed dumplings||
1 tsp ⁠ vanilla powder⁠⁠
125ml Milk
100ml Cream
1 tsp starch
1 Egg yolk
30g Sugar
Poppies as desired

Instructions

Step 1 of 6:

 

Combine all ingredients for the dough and knead thoroughly with the dough hook of the kitchen machine for 12-15 minutes. The dough should be relatively firm and peel off the hook in one piece. ⁠⁠

Step 2 of 6:

 

Let the dough rise, covered, for 45-60 minutes at 30 degrees Celsius. ⁠⁠

Step 3 of 6:

 

Meanwhile, prepare the filling. Peel the apples, cut into small cubes. Combine with the other ingredients in a pot and cook until soft for 15 minutes. Then mash slightly.⁠⁠

Step 4 of 6:

 

Cut the yeast dough into 6 equal portions of approx. 100g each. To fill the Dampfnudeln, press a dough portion flat in your palm, place some baked apple filling in the center. Close the dough by pressing two opposite sides together. Then shape the portion into a uniform ball. Let the Dampfnudeln rise, covered, for 30 minutes. Fill the Vitavit® Premium pressure cooker with water up to the min. mark. Place the Dampfnudeln in the sieve and cook for 20 minutes with the lid closed according to the instructions of the Vitavit® Premium pressure cooker. Two to three cooking cycles are necessary for the number of Dampfnudeln. ⁠⁠

Step 5 of 6:

 

For the vanilla sauce, simmer 100ml milk, cream, and vanilla powder for 10 minutes. Combine the remaining ingredients separately. Then add the egg mixture to the milk while stirring. Heat the milk until the mixture becomes creamy. Then remove from heat. ⁠⁠

Step 6 of 6:

 

Serve the Dampfnudeln with vanilla sauce and poppy seeds.⁠
