Colorful One Pot Vegetable Rice

Ingredients
| 200 g | uncooked rice |
| 1 finely chopped onion | |
| 1 | finely diced yellow bell pepper |
| 1 can | chopped tomatoes 400 g |
| 400 ml | Water |
| 1 tbsp | Ajvar |
| 1 tsp | salt |
| 2 tsp | vegetable broth |
| 1 small can each of | corn and peas/carrots (140g each) |
| Some chopped parsley | |
| A little oil for frying. |
Instructions
Step 1 of 5:
Sauté onions and peppers in a little oil for 3-4 minutes, add the rice and sauté briefly until translucent.
Step 2 of 5:
Deglaze with chopped tomatoes and water, stir in spices and Ajvar.
Step 3 of 5:
Simmer gently over low heat with the lid on for about 15 minutes, stirring occasionally.
Step 4 of 5:
Then stir in the corn and peas and carrots and cook for about 5 more minutes.
Step 5 of 5:
Serve with chopped parsley; it tastes great as a side dish, but also works well as a vegetarian main course.
