Colorful One Pot Vegetable Rice

Ingredients
| 200 g | uncooked rice |
| 1 | onion, finely chopped |
| 1 | yellow bell pepper, finely diced |
| 1 can | chopped tomatoes 400 g |
| 400 ml | water |
| 1 tbsp. | ajvar |
| 1 tsp | salt |
| 2 tsp | vegetable stock |
| 1 small can each | corn and peas/carrots, 140 g each |
| Some | chopped parsley |
| Some | oil for frying |
Instructions
Step 1 of 5:
Sauté onions and peppers in a little oil for 3-4 minutes, add the rice and sauté briefly until translucent.
Step 2 of 5:
Deglaze with chopped tomatoes and water, stir in spices and Ajvar.
Step 3 of 5:
Simmer gently over low heat with the lid on for about 15 minutes, stirring occasionally.
Step 4 of 5:
Then stir in the corn and peas and carrots and cook for about 5 more minutes.
Step 5 of 5:
Serve with chopped parsley; it tastes great as a side dish, but also works well as a vegetarian main course.
