Braised salmon

Ingredients

2 Lachsfilets (à 200g)
1 Zwiebel
1-2 Knoblauchzehen
3 cm frischen Ingwer
1 Stange Lauch
1 Möhre
100 g Basmatireis (gewaschen)
2 EL Rapsöl
1-2 Balsamicoessig
4 EL flüssiger Honig
1 EL Sake
4 EL Sojasauce
1 Bund Koriandergrün

Instructions

Step 1 of 7:

 

Preheat the oven to 160 degrees Celsius top/bottom heat. Rinse the salmon under cold water and pat dry. Peel the onion, garlic, and ginger, and finely chop everything.

Step 2 of 7:

 

Trim the leek and cut it into fine strips about five centimetres long. Peel the carrot and cut it into equally long thin strips.

Step 3 of 7:

 

Heat a little oil in the roasting pan, add the ginger and onion, and sauté. As soon as the onion turns translucent, add the salmon steaks and sear on both sides until browned, turning carefully. After about 5 minutes, add the garlic.

Step 4 of 7:

 

Mix together sake, soy sauce, honey, balsamic vinegar, and 2 tbsp. rapeseed oil, then pour over the salmon. Let the fish simmer in the marinade in the roasting pan for a few minutes, then place in the oven for about 20-25 minutes.

Step 5 of 7:

 

Meanwhile, prepare the rice: first place the rice in a sieve and rinse until the water runs clear, then let it drain. Then place the rice in the Pressure Cooker, add a little salt and water in a 1:1 ratio, close the pot, and heat on the highest setting. Cook the rice on the highest setting for about 5 minutes, then fluff it up slightly.

Step 6 of 7:

 

Heat a little oil in a Frying Pan, add the leek and briefly fry. Then add the carrot strips and cook until everything is almost done. Add the rice to the vegetables as well. Add coriander leaves, mix everything well, and fry for another 2 minutes.

Step 7 of 7:

 

Remove the salmon from the oven and arrange on plates together with the vegetable rice. Pour over the remaining marinade and serve.
