Winemakers recommend mild, dry varieties such as Pinot Blanc or Chardonnay, Sauvignon Blanc, or Müller-Thurgau to accompany white asparagus. For purple asparagus, something with a bit more character is suitable; Rivaner and mature Riesling varieties are good choices here.

Green asparagus generally tolerates more spice: Aromatic Riesling, Sauvignon Blanc, Silvaner, or Pinot Gris harmonize perfectly.
