I have the "Crispy Steelux Premium" which I think is discontinued. The handles are different but the waffled "Novogrill" fry pan cook surface is the same. I own both size pans. I have used the 11" to brown meat before putting it in the crock pot. It worked perfect for that. I have also cooked T-bone steaks in this pan. Worked great. I got rid of my impossible to clean cast iron Lodge grill pan. I use the smaller pan almost daily to cook my scrambled eggs. It works perfectly for that. I get the pan nice and hot, add butter, melt butter but do not let it burn/turn brown. Add eggs. A silicone spatula works well for stirring the eggs in the pan. Keep stirring so the eggs do not overcook. I have not had a problem with eggs sticking. I just make sure the pan is hot enough and that I use plenty of butter. These pans also clean up very easily. Browning and cooking beef made a huge ugly mess that looked burned on but actually came off very easily. My tools are a scrubby made for stainless steel and a plastic scraper tool. I either soak the pan in water for a bit or I put water in it and heat it up on the stovetop and scrape with the scraper. All the stuff that looked burned on came off very easily. It cleans up similar to Corning pyroceram casserole dishes. My only complaint is that if you want a lid, you pretty much have to buy a Fissler lid. I am in the USA. Pan sizes here are different than the Fissler sizes, so it would be rare to find a lid at a resale shop or one that you already own that would fit.
Comparing this pan to our Emeril stainless steel collection, Fissler stands above. Overall design and build quality is noticeable from the sturdy build of the handle to the overall feel and weight of the pan. Love the easy care of the pan. Additional benefits are the measurements within the pan for deep frying and the higher quality finish on the pan surface. Definitely will be replacing our remaining pans with this brand and collection. Highly recommend!
