- When steaming, the evaporated liquid circulates with the lid closed. This cooking method is particularly healthy, as vitamins and minerals are largely preserved. In addition, you need little oil.
- Without a lid, meat quickly loses liquid and becomes tough and dry. When braising, the steam rises in the pan, collects in the pan lid and drips back down onto the food. The result: intense flavors as well as juicy and tender meat.
- Creamy risotto also needs to cook for a long time and therefore works best if you use a pan with a matching lid.
